Wusthof Part 7: How to Use a Cook’s Knife

A cook´s knife is one of the most important tools in the kitchen and for a professional chef, it is one of the most essential tools. Here’s how to hold and use a cook’s knife:

There are several different ways to hold and work with a knife efficiently. These pictures from Wusthof will show you a technique that chefs prefer.

Step 1: Gently place three fingers around the handle. The middle finger is placed onto the bolster.

Step 2: Thumb and pointing finger clasp the blade left and right (vice versa for lefties).

Step 3: That´s how you safely hold your knife.

For use at home we suggest using a cook’s knife of a blade length up to 12 inches. Larger knives are mostly used in professional kitchens.
