Chop your veggie of choice into bite-sized pieces. Remember, the smaller the pieces, the faster they will cook. Toss your veggies with a little olive oil, salt, and pepper and arrange them on a baking sheet. Roast for the appropriate amount of time and the correct temperature.
Tips for sautéing
If sautéing multiple vegetables at one time, place the vegetables in the saute pan in reverse order of their cooking times. This helps prevent some vegetables being over or under cooked. Saute with a little oil of your choice. When all the vegetables have cooked for the correct amount of time remove from heat and season with salt and pepper or fresh herbs.
