It’s Monday… which means it’s time for another truffle recipe. This time it involves peanut butter. Here is our yummy recipe for peanut butte crunch truffles
Peanut Crunch Truffles:
What you will need:
14 oz. sugar
1/2 lb. light corn syrup
2/3 c. water
18 oz. peanut butter
Peters Chocolate (Milk or Dark)
Salt to taste
Instructions:
Combine sugar, corn syrup, water and salt. Cook over medium heat until mixture reaches a boil. Continue cooking until reaching hard crack stage (300 degrees F). Remove mixture from heat and stir in peanut butter using wooden spoon. Pour the mixture onto oiled slab scoring (1.5″ x 1.5″ pieces) with a well oiled knife. Let the confection cool and set (approximately 1.5 hours). Cut into pieces. Coat with tempered Peter’s Chocolate.
Yield: Approximately 120 pieces
