And since we are speaking of silicone, I had a reader ask earlier this week what the benefits were of using a silicone cake pan. Silicone evenly distributes heat and won’t stick to your baked goods. It’s flexible for easier removal, versatile, and durable. Silicone tends to give your baked goods a paler color because it doesn’t brown them the way that aluminum would. The difference is in the opinion.
