It can be a little be frightening to open up a bag of chocolate only to see it is covered in a white powdery substance… unless you know what it is and why it’s there. It’s called bloom and many people wonder: Does Chocolate Bloom Affect the Taste?
Here at Gygi’s, we get a lot of questions about it. You can read all about bloom here. But as for the taste question goes, the answer is no. Bloom will not affect the taste of chocolate. Sure, it doesn’t look pretty, but it still tastes yummy. Bloom does not mean your chocolate has gone bad, rather it has just been stored improperly. If you are melting the bloomed chocolate, the bloom will mix right back in.
Most people wonder why their (frozen) chocolate chips turn white when they’ve opened the bag. Bloom is the result of drastic changes in the chocolates temperature. So when all is said and done, chocolate should never be kept in the freezer.
