Can I Put Any Chocolate in a Chocolate Fountain?

One of the questions we get often is, can I put any chocolate in a chocolate fountain? The answer is yes… and no.

Yes, you can use any chocolate in a chocolate fountain, but it has to be formulated to have a lower viscosity, or in simpler terms make it runnier.  If you add melted chocolate to a fountain without thinning it out, it will clog your machine.

So what if you want to use a different kind of chocolate? 

You still can! It just requires you formulating it yourself. Here’s how:

How to Formulate a Compound Coating:

  • Add 2 tablespoons of cocoa butter to 4 cups unformulated chocolate.

How to Formulate a Couverture Chocolate:

  • Courverture chocolate is a little tricky to work with when it comes to chocolate fountains, but it can be done. It melts a little thinner, so not as much cocoa butter is needed. We suggest adding 1/2 tablespoon of cocoa butter at a time, until you get the right consistency.
