We all have that same instinct first thing in the morning, you know the one, hit the snooze button for five extra minutes of blissful sleep. However, hitting the snooze button comes with a price, which is most commonly sacrificing a healthy breakfast. The good news is that you’re not alone, here at Gygi, we feel ya. That’s why we’ve dedicated this post to easy and healthy on-the-go breakfast ideas.
Our first idea came to us how all of our great ideas are born, by perusing the Gygi store. As we passed our unique pancake pans and tins, it dawned on us: Freeze playful pancakes for a quick on-the-go breakfast that even your kids will eat.

Now, time to make your delightful pancakes work towards your health. Add a fruit puree to any pancake recipe to, not only add your daily dose of fruit, but also add a splash of color to brighten your morning meal. Here is our favorite recipe for homemade pancakes with added puree:
Ingredients
- 1 1/2 c flour
- 3 1/2 t baking powder
- 1/2 t salt (or to taste)
- 1 Tbsp white sugar
- 1 1/2 c milk
- 1 large egg
- 3 Tbsp butter - melted
- 1/2 c puree of your choice (strawberry, apple, blueberry banana)
- Chopped fruit to match puree, to taste (optional)
Directions
- Stir together flour, baking powder, salt, and sugar
- In a separate bowl beat egg and milk together
- Add butter to milk and egg mixture (whip together to prevent butter from solidifying)
- Add the milk mixture to flour mixture and stir gently together
- Gently fold in fruit puree
- Cook on low-medium heat until golden brown
However, there is no shame in using a pancake mix. Gygi has plenty to chose from.
A tip to adding a fruit puree to a box mix is to just add a little less water. Mix your batter and water, then stir in your puree at the end. Good pancakes are all about the texture of the batter. To ensure great pancakes have a smooth, not too thick, batter.
No pancake is complete without syrup and if you are the type of person who enjoys variety don’t use that store bought generic syrup. Make your own in under five minutes. Here is a great video that shows how to make simple syrup provided by Bake Like A Pro.
