What you’ll need

1 pound potatoes (diced into 1/2 inch pieces)

2 tablespoons olive oil

1 tablespoon of the Gygi Cajun spice

Preheat the oven to 450 degrees Fahrenheit. Toss the diced potatoes, olive oil, and the Cajun spice together in a mixing bowl. If you prefer your potatoes peeled, you’re welcome to peel them before dicing them. We love the color the peels add to this dish and decided to leave them on.
