Easy Chilaquiles Recipe

Chilaquiles is a traditional Mexican dish that is usually made of tortillas, a chili or mole sauce, and cheese. This easy chilaquiles recipe makes for a beautiful brunch dish or an easy and delicious dinner.

What you’ll need

10 corn tortillas

2 teaspoons Colorado red salt

10 oz green chili sauce

1/2 cup pepper jack cheese (grated)

3-4 eggs

1 avocado

Serves 3-4

Preheat the oven to 350 degrees Fahrenheit. Cut the tortillas into triangles and lay each triangle in a single layer on a baking sheet. If you need to use two baking sheets to ensure there is no overlap, that is fine. Sprinkle with the Colorado red salt and bake for 8-10 minutes, or until the edges are slightly browned. Watch the tortillas toward the last couple minutes, as they can burn quickly. Remove from oven and allow them to cool slightly.

Place the tortilla triangles in an oven-safe pan, a cast iron skillet works great, and top with chili sauce. Sprinkle the cheese on top of the chili sauce.

Easy Chilaquiles recipe

Place the pan into the oven and bake for 15-20 minutes, or until the cheese is melted and the sauce begins to bubble. While the pan is in the oven, fry your eggs in a saute pan until the whites are set, but the yolks are still soft. Prepare the avocados by slicing them into wedges and prepare any other garnishment you want, such as cilantro or lime slices.

Remove the tortilla mixture from the oven and top with the eggs, avocados, and other garnishments. Serve warm.
