Grilled Peach Salad

A grilled peach salad is an easy and healthy suggestion when you’re looking for a last-minute dinner idea. Using fresh peaches keeps the salad light and fresh while the arugula’s bitter taste complements the sweetness of the peaches. With only 4 ingredients needed to make this simple salad, it will become your summer go-to meal.

What you’ll need

2 cups arugula (or 2 handfuls)

1 peach (sliced into wedges)

Mozzarella

1-2 tablespoons balsamic glaze

Makes 2 servings

Turn on your grill and allow it to get hot while you prepare your fixings. When measuring the arugula, plan for about 1 cup per serving. A good handful of arugula is close to 1 cup, or 1 serving. Plate the arugula before grilling the peaches. Prepare your mozzarella by slicing them into thin rounds before grilling the peaches. Place your peach wedges onto a hot grill. Grill each side for about 2 minutes. If left on too long the peaches will turn too mushy to use, so watch them carefully when you’re grilling them. When your peaches are grilled to your satisfaction, top your arugula salad with the peaches and mozzarella. Drizzle a little balsamic glaze on top.
