The Simplicity of a Bistro Salad

Bistro Salad Recipe

Bistro Salad Recipe

There is something to be said about the simplicity of the bistro salad. Because many of the flavors of the spring mix are bold by themselves, this type of salad needs very little to dress it up.

What you’ll need

2 bags of 5 oz baby spring mix

2-3 tablespoons lemon olive oil

1 lemon (for zest)

Small bunch of basil

Small bunch of mint

8 oz shaved parmesan

14 servings

Add the chopped mint and basil to the baby spring mix in a large mixing bowl. Toss the salad with the lemon flavored olive oil. If you’d prefer to use a different flavor rather than lemon try any of these flavored oils.

Zest the entire lemon and set the zest aside. Squeeze the fresh lemon juice from the one lemon half on top of the salad and toss to combine. Top with the fresh parmesan and lemon zest.
