If you’re new to grilling, barbecuing, smoking, etc., it can be terrifying to splurge on a nice cut of meat, only to ruin it with a disappointing recipe. I’ve been there! And I’ve been bummmmmed. It is this exact sentiment that prevented me from cooking ribs for years.
But this recipe from Traeger changed that for me! The 3-2-1 method starts with THREE hours of smoking. Then, up the temp and cook for TWO hours in a foil pouch. Finally, rub with sauce and finish for up to ONE hour. It is an investment of time, but it is worth it.
