Baby Back Ribs – Grilling Gala 2019

“I want my baby back…” If you’ve had the privilege of eating the kind of ribs that get you good and messy, while the tender meat gently falls from the bone than you know what a reward that can be. Especially when you do it yourself!

One the flip side dry, tough, flavorless pork is so disappointing.

Chef Todd’s baby back ribs are great for those interested in smoking but can’t commit to a full 12 hours of tending your smoker. These ribs are done in under four hours, take very little babysitting, and produce juicy, flavorful, fall off the bone goodness every time.

Baby Back Ribs

Ingredients

  • 3 racks baby back ribs
  • 3 Tbsp Chef Todd's BBQ Rub
  • 2 Cups BBQ Sauce
  • 2 Tbsp Olive Oil
  • 2 cups Chicken Stock

Instructions

Clean and remove the silver from the ribs.

Rub each rib with the spice rub and then a little bit of the oil after seasoned.

Smoke the ribs for 45 minutes at 225 for 3-4 hours. (Or 3-4 hours in a wood burning smoker at 200 degrees.)

Place ribs on a shallow sheet pan and pour chicken stock onto the pan, wrap pan tightly with foil, cook ribs in the oven an additional 1 1/2 hours to tenderize at 300 degrees.

Remove foil, baste with BBQ sauce and grill to caramelize.

Continue basting with BBQ sauce until fully caramelized.
