Start With the Right Kitchen Tools

So, let’s roll up our sleeves, grab your favorite frying pan, and get cooking this Traditional Irish Boxty!

Peel potatoes. Boil two until fork soft. Grate remaining two with box grater. Press extra moisture out of grated potatoes. Slice scallions. Set aside the darker (more flavorful) portion for garnish. Mix whiter part in with grated potatoes. After boiled potatoes are soft, mash until smooth and add grated potato mixture. Stir until combined. Add eggs, buttermilk, corn starch, baking powder, and seasoning. Mix thoroughly. Heat oil in frying pan over medium heat. Using ⅓ size measuring cup, scoop batter into hot pan and slightly flatten. Let cook until the bottom is brown and the bubbles on top have popped (like a pancake). Flip and brown on the other side (about 2-3 minutes minimum per side).
